Potato Kurma

Potato Kurma is a simple dish made with potatoes, onion, and tomato and coconut ground paste. This dish will be surely relishable by kids, as it gives potato a nice flavor when mixed with the gravy. This is easy to cook recipe, as it doesn’t require any other vegetable for cutting and since potato is boiled and cubed, this can be done in a jiffy. A easy way to finish making this dish fast is to keep the potato for boiling/cooking and simultaneously start the cooking process. By the time onion, tomato and other ingredients gets cooked, potato too will be boiled and can be used towards the end. 

Best Accompaniment for : Chapathi / Roti / Phulka / Dosa

Ingredients:

1. Potato - 2 Big, boiled & skin peeled & cubed
2. Onion - 1 big, chopped
3. Tomato - 1 big, chopped
4. Coconut – ½ cup
5. G.chillies - 4
6. Ginger - 2"
7. Garlic - 4
8. Cumin Seeds- 1 tsp
9. Salt – 2 tsp
10. Oil – 2-3 tsp


Pre-requisite:

1. Ground to Paste: coconut – ½ cup, g-chillies - 4, ginger - 2", garlic - 4

Method:

1. In oil, season with cumin seeds.


2. When jeera splutters, add onion and fry till it becomes brown and aromatic.


3. Add tomato and fry till mashy and tomato well cooked.


4. Add the ground paste and mix well, & add salt and haldi.


5. Add the cooked potato pieces and mix well (ensure the potatoes don’t break) and cook for 5 minutes, adding required water to bring it into a gravy consistency & garnish with coriander leaves and remove.
