Kadambam Curry

Kadambam in other words means Kalavai, which means Assortment. As the word suggests, this curry is an assortment of different vegetables and hence the name. Kadambam curry is very healthy curry as it contains various vegetables mainly of fibre rich content like Cabbage, Cauliflower, beans, peas & carrot. This is very easy to make as all that is required is to just cooked these vegetables and do a simple tadka. The curry is ready! 

This is a good accompaniment for south Indian lunch, comprising of any sambar/rasam/kozhambu etc.

Ingredients:

1. Mixed Vegetables - Carrot/Beans/Cabbage/Peas - all or any of the combo- 2 Cups
2. Coconut - 1 Cup
3. Salt- 2 tsp
4. Oil - 1 tsp
5. Season: Mustard - 1 tsp, broken urud dhal - 1 tsp, Channa Dhal - 1 tsp, g.chillies - 4 (each slit into 2), Curry leaves - 5

Pre-requisite:
 
1. Boil all the vegetables with little salt until they are tender and strain all water, keep the cooked vegetables ready.
 
 
 
Method:
1. In Kadai, season with the season ingredients.
 
 
2. Add the cooked mixed vegetables & mix well. Add salt and cook for a 2-3 minutes, for any little water to evaporate &  add coconut and mix well.


3. Keep on low flame for a minute or two and remove.
