Aloo Methi

Aloo Methi is one of a very palatable side dish for chapathi/roti. This recipe is made with Aloo and Methi leaves, this is a dry curry.  Methi leaves has many benefits and if used in our regular diet is highly beneficial to our health.

1.       Very good source or Iron
2.       Rich source of vitamin K
3.       Very good source of roughage & will fulfil body’s fibre requirement
4.       It improves hair growth & good for maintaining healthy and shiny hair

Best Accompaniment for : Chapathi / Roti / Phulka

Ingredients:

Potato(Aloo) - 6 medium size
Red Chillies 2  or red chilly powder – 1tsp
Salt To taste
Methi(Fenugreek) leaves - 1 Cup
Coriander Powder - 1 teaspoon
Turmeric powder - 1/4 teaspoon
Hing - 1/2 teaspoon
Oil - 2 tablespoon
Seasoning Ingredients: Oil - 1 tsp, mustard seeds - 1tsp, broken urud dhal - 1 tsp


 
Pre-Requisite:

1. Peel the skin of potatoes and chop it to a medium size cubes and soak it in water.
2. Wash the methi leaves and finely chop it and sprinkle some salt and keep it aside for 30 minutes.
3. Boil in potatoes till it is cooked completely. If we are planning to cook in pressure cooker, then allow only 2 whistles.

Method:

1. Heat oil in a pan, add seasoning ingredients.

 
2. When the seasoning ingredients starts to sputter, add broken red chillies or red chilly powder.

3. Now add chopped potatoes , hing and salt and mix well and keep in medium fame for 5 minutes.

4. Finally add chopped methi leaves and mix well & cook till the methi leaves are well cooked.

5. Keep in low flame for 10 minutes and then switch off the flame.
