Rava Upma

Rava Upma is instant Tiffin prepared in most of south Indian house-hold. There are numerous ways rava upma can be prepared like simple plain rava upma, rava onion upma, rava vegetable upma, rava oats upma etc. It’s one’s own choice to include their preferred vegetable to it. But in whichever way it is prepared, it is certainly very tasty dish. Upma can best be savored with coconut chutney. 

In this preparation, I have made upma with onions.
Ingredients:

Rava (Sooji) : 1 Cup
Big Onion (Chopped) – 1
G.Chillies – 3 (Slit & cut into 4)
Red Chilly – 1 (broken into 2)
Ginger , chopped fine – ½ tsp
Hing – ½ tsp
Curry leaves – 10
Salt – 2 to 3 tsp
Water – 1 ½ Cups
Coconut Oil – 1 tsp
Ghee – 2 tsp (optional)
Seasoning : Oil – 2 tsp, mustard seeds – 1 tsp, broken urud dhal – 1 tsp, channa dhal – 1 tsp



Pre-requisite:
1. Dry fry rava in a pan, until it becomes slightly brown and aromatic and remove.



Method:
1.  In a Kadai, add oil and season as given.
2.  Once seasoning ingredients turn light brown, add g.chillies, red chillies, curry leaves and hing to the above & fry for few seconds.



3.  Now add chopped onion and fry till onion turns translucent.


4.  Pour water into the kadai and wait till the water starts boiling, when boiling begins, add required salt. At this stage, if you want, optionally add 2 teaspoon of ghee.

5.  Now sim the flame and slowly start adding the fried rava to the boiling water and stir continuously to avoid any lumps.


6.  Once rava is mixed well with water, close the kadai with a lid and let it cook for 2-3 minutes on low flame.

7.  Open the lid, add a teaspoon of coconut oil and mix well & switch off.
8.  Serve upma with any chutney of your choice, but best combination is coconut chutney.


Note:
1.  Adding coconut oil adds up flavor to the rava upma, but it’s optional to use.
2.  Red chilly can be avoided if you are not comfortable using it.
3. If possible, fry the rava beforehand and always keep stock of fried rava at home, so that while making this upma you can directly use the stored fried rava.
