Keep Green Chillies fresh for long

Green chillies are integral part of our Indian cooking. However most often when we buy them in bulk and store, we don’t find them fresh for long, sooner they start spoiling. Here is a simple step to prevent green chillies spoilage and ensure longer shelf-life.  This method preserves your green chillies fresh for about 2-3 weeks.
 

Method:

1. Wash the green chillies as soon as it is bought in plenty of water. This ensures any dust/dirt in it gets washed off.



2. Pluck the stem of the green chillies and throw away.  (Green chillies are known to have bacteria around its stem, snapping the stem off eliminates bacteria).



3. Spread them in a dry cloth or a plate or a plastic sheet or paper towel and dry them.


4. Once dried, store them in air-tight container and refrigerate (no need to deep freeze).
 


Tips:

1. While storing, if you find any spoiled green chillies amidst the good one’s, remove them immediately.
2. Whenever green chillies are required for your cooking, take ONLY the required amount of green chillies from the air-tight container and put it back into your fridge immediately. This ensures longer shelf life.
