Sprouts Pulav

Sprouts Pulav is a very healthy meal made with sprouted green gram, onion and some masala ingredients. Sprouted Green gram is very nutritive as it is rich in protein & low in calorie & easily  digestable.  This meal is a good alternative for sprouts salad, as even kids will enjoy sprouts made like pulav than just a salad. This Sprouts pulav goes well with onion raita. If you choose, you can make any gravy or vegetable side dish for this to enjoy the good combo of a healthy meal with a tasty side-dish.

Here are quickly the steps on how to sprout a green gram:

1. Soak green gram in a broad vessel with excess water to cover the green gram and keep for 8-10 hours.
2. After that, strain all the water using a strainer/colander, show the strained green gram under running tap water & wash it for few seconds, and put that strained green gram into another  broad vessel or the same vessel after rinsing it.
3. Cover the vessel with any lid/plate with holes. The green gram needs aeration for sprouting. Keep like this for 12-24 hours. The green gram will sprout very well. 

Ingredients:

Sprouted Green Gram – 1 Cup
Onion Big – 1, Cut to medium size
G. Chillies – 7 (grind to paste)
Ginger Garlic paste – 1 tsp
Cumin seeds– 1 tsp
Chilly Powder – ¾ tsp
Coriander Powder – ¾ tsp
Cumin Powder – ¾ tsp
Mint leaves – 1 cup
Salt – 2-3 tsp
Oil – 6 tsp
Basmati Rice – 1 Cup
Water – 1 ¾  Cups
Spices for seasoning : Cloves – 2, Cinnamon – 2”, Bay leaves – 2


Pre-requisite:

1. Wash Basmati rice & fry the rice for a min or two and keep ready.
2. Grind green chillies to paste and keep ready.

Method:

1. In a Pressure cooker, add oil and when it heats, add the spices for seasoning.


2. Add Ginger-garlic paste and fry for few seconds.


3. Add Onion and fry till it turns light brown.


4. Add the green chilly paste , red chilly powder, coriander powder, cumin powder and fry for a minute.


5. Add the Mint leaves and mix well and fry for few minutes till nice aroma comes from the mint leaves and it is crushed well.


6. Add the sprouts and mix well.


7. Add the washed rice & fry for few mins. Add necessary salt and then 1 ¾ cups of water and mix well.



8. Add a bunch of coriander leaves, spread on the top of the mixture and close the cooker, adding weight and keep on low flame for exactly 10-12 minutes & switch off.



9. After the cooker cools, open and transfer to a bowl and serve topped with freshly chopped coriander leaves.
